Davide Trezzi is originally from Milan, Italy. Davide is not formally trained and is a self-taught cook. Before moving to Green Bluff, a small historic farming community North of Spokane, Davide ran a successful catering company in Sonoma County. Many of the clients he cooked for were local area wineries.

Like the rustic recipes themselves, food presentation is simple & uncomplicated. When called for, dishes are embellished with herbs.

cook's philosophy

Davide says that he's a home cook, not a chef. He insists that foods should always be simple enough to identify individual ingredients by taste.

style

The foods can be rustic or refined. They are always simple and never pretentious. Fresh ingredients are used such as the herbs grown on the farm. For any given recipe, the number of ingredients can be counted on one hand.
