Meet the cook. Davide Trezzi from Milan, Italy.

Davide Trezzi, owner and cook, creates authentic Northern Italian catering and retail dishes using wine he makes, and fresh herbs and vegetables grown on the farm.

Home cook: Davide is not a formally trained chef and calls himself a "home cook." Davide grew up on the foods prepared by his mother and grandmother - classic recipes of Northern Italy's Lombardia Region.

Cook's philosophy: foods, both rustic or refined, should be simple enough to identify individual ingredients by taste. The most important ingredient is restraint.

Presentation: understated. When called for, dishes are embellished with fresh herbs and grape leaves harvested from the farm's garden and vineyards.

Catering Services

On-Site | events on Trezzi Farm from 20-200 guests. We offer wine and bartending, buffet-style catering and customizable menus for all events held on our farm and winery.

Customer Pick-Up | we prepare hot-foods ready-to-eat and you pick-up. Ready-to-bake also available. ***Pick-ups include free disposable eating & serving utensils upon request.

Delivery | we'll prepare hot-foods ready-to-eat. We will deliver everything to your event and set it up on your buffet in high-quality aluminum containers. Salads will be dressed on-site, tri-tip carved on-site. ***Deliveries are free in the Spokane area. Deliveries include free disposable eating & serving utensils upon request. No set-up fee.

Off-Site | we stay at your venue during your event, monitoring and replenishing the buffet with fresh foods. Professional catering equipment included. We are self sufficient and do not require a kitchen (except for garlic bread.) ***No travel charge within Spokane area. Off-site catering includes free disposable eating utensils upon request.     - keep cover (cardboard or aluminum) on tight
    - bake until lid puffs up & swells
    - 2 lb. frozen: approx 75-85 minutes
    - 2 lb. thawed: approx 55 minutes
    - 8 lb. thawed: approx 1 3/4 - 2 hr

    - preheat oven to 350
    - keep cardboard lid on tight
    - bake until hot in middle

    soup instructions:

    - place in sauce pan
    - bring up to simmer
    - continue to simmer for approx 30 min. until soup reduces & thickens

    - they're tender, so stir gently

    First, I wanted to thank you both for catering the CH2MHill Holiday party. Our party was a HUGE success and you both played a key role in it. All of the food was absolutely delicious. Everyone commented on how much they liked it. You both were so friendly; I really enjoyed visiting with you both. Mille graze!!!

    p.s. My husband, Roger, was craving your polenta the day after the party. But there was a little bit left over and someone gave it to a vegetarian couple. :) Too bad...we wanted the leftovers. Ha!

    Buon giorno Davide and Stephanie,

    We felt like little kids coming home with our goodies; the wine, meatballs and polenta dish - needless to say we pigged out!! The next morning we had some left over sauce sitting in one of my favorite frying pans. Some farm fresh eggs I picked up that day found their way into the pan with all that incredible sauce and well, you know the rest of the story.

    Those meatballs were so smooth - that meat feels like it went through the finest grinder - tender and tasty and the polenta cooked just perfect. The only time I get up and eat left overs is usually Christmas or Easter - I cook a lot of Italian dishes especially for my two sons whose papa is Sicillian.
    Well, I just wanted you both to know how much we enjoyed your company, kindness and food! Carry on -

    It was great to meet you both today. I am so glad I found you. I purchased the meatballs and Polenta and my family and I had it for dinner tonight. Oh how marvelous! Delicious! Took me back to growing up in New York in a large Italian family.
